- 2 lb. yellow squash, sliced
- salt and pepper to taste
- 1 can cream of chicken soup, undiluted
- 1 (2 oz.) jar diced pimentos, drained
- 2 carrots, grated
- 1 small onion, chopped
- 1 (8 oz.) container sour cream
- 1/4 c. butter or margarine, melted
- 1 pkg. herb seasoned stuffing mix
Directions

1Cook squash in small amount of boiling water until tender; drain well and mash.

2Add salt and pepper.

3Combine soup, pimentos, carrots, onion, sour cream and butter, blending well.

4Add squash and mix thoroughly.

5Line a greased casserole dish with half the stuffing mix.

6Spoon squash mix over the stuffing.

7Cover with remaining stuffing.

8Bake at 350° for 40 minutes or until bubbly.
