- 2 lb. fresh squash, thinly sliced
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 (2 oz.) jar chopped pimentos
- 1 c. mayonnaise
- 1/2 c. sugar
- 1 egg
- 1 c. grated cheese
- Ritz cracker crumbs
Directions

1Slice squash into a 9 x 13-inch casserole dish.

2Sprinkle with salt and pepper.

3Beat egg with mayonnaise, sugar and pimentos. Stir in chopped onion and bell pepper, then pour the mixture over the squash.

4Cover; bake at 400° for 1 hour.

5Uncover; sprinkle with cheese and Ritz cracker crumbs.

6Return to oven until brown.
