- about 8 medium yellow squash
- 1 medium onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. butter
- 1 c. mild cheese
- 1 egg
- 1/2 c. sour cream or 1/2 c. cottage cheese
- cracker crumbs
- melted butter
Directions

1Cut squash and dice medium onion; barely cover in water.

2Add salt and pepper.

3Boil for 15 minutes.

4Drain.

5Add butter, cheese, egg and sour cream or cottage cheese.

6Mix and put in buttered casserole dish.

7Top with cracker crumbs with a little melted butter.

8Bake at 325° for 30 minutes.
