Squash Casserole

Ingredients

  • about 8 medium yellow squash
  • 1 medium onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. butter
  • 1 c. mild cheese
  • 1 egg
  • 1/2 c. sour cream or 1/2 c. cottage cheese
  • cracker crumbs
  • melted butter

Directions

    Cut squash and dice medium onion; barely cover in water.

    Add salt and pepper.

    Boil for 15 minutes.

    Drain.

    Add butter, cheese, egg and sour cream or cottage cheese.

    Mix and put in buttered casserole dish.
  7. 7
    Top with cracker crumbs with a little melted butter.

    Bake at 325° for 30 minutes.
