- 2 lb. fresh squash
- 1 large onion
- 1 green bell pepper
- 2 eggs
- 1/4 c. milk
- 1/2 stick margarine
- 1 1/2 c. saltine crackers, crushed
- 1 c. grated cheese or 1 can Cheddar cheese soup
Directions

1Cook squash, onion and bell pepper until tender, drain well. Mash and add margarine and cheese or cheese soup, stir until cheese melts.

2Mix milk and eggs.

3Add to squash.

4Mix well, then add crushed saltines.

5Pour into casserole dish and bake at 350° for 25 to 30 minutes or until lightly brown.
