Squash Casserole

  • 4 c. yellow squash, sliced
  • 1 onion, sliced
  • 4 Tbsp. margarine, melted
  • 1 c. sour cream
  • 2 c. mild Cheddar cheese, grated
  • salt to taste
  • pepper to taste
  • cheese flavored cracker crumbs

Directions

    Preheat oven to 350°.

    Saute squash with onion in 2 tablespoons of margarine.

    Combine squash, onion, sour cream, 1 cup of cheese, salt and pepper.

    Spoon into greased casserole dish.

    Top with remaining cheese and cracker crumbs; pour remaining 2 tablespoons margarine over top.

    Bake for 30 minutes.
