- 3 medium yellow squash
- 1 onion, chopped
- 1/2 c. bread crumbs
- 1/3 c. Cheddar cheese, grated
- 1 egg, beaten
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 Tbsp. oleo, divided
Directions

1Cook squash and onion until tender in small amount of water. Drain.

2Add bread crumbs, cheese, egg, salt, pepper and 2 tablespoons oleo.

3Spoon into greased casserole dish.

4Top with bread crumbs and dot with 2 tablespoons oleo.

5Bake at 375° for 10 minutes or until brown.

6Serves 4.
