- 8 small zucchini squash
- 1 medium size onion, sliced
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. butter
- 2 tsp. water
Directions

1In a large skillet over moderate heat, saute onion in butter. Remove onion and set aside.

2Cut 8 small zucchini squash into 1/2-inch rounds.

3Saute in skillet with remaining butter.

4Add water, salt and pepper.

5Cook covered with tight-fitting lid for 6 to 8 minutes;

6add onion.

7Blend in with a fork.

8Do not overcook as squash becomes soggy and loses it shape.
