- 2 lb. yellow squash, sliced
- 2 to 2 1/2 c. bread crumbs, divided
- 1/2 c. minced green onions
- 2 eggs
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. cornmeal
- vegetable oil
Directions

1Cook squash in a small amount of water until tender; drain and mash.

2Add 2 cups bread crumbs and next 5 ingredients.

3Add more bread crumbs if mixture is too soft.

4Shape into 18 logs; roll each in cornmeal.

5Deep fry in hot oil at 375°.
