Squash Croquettes

Ingredients

  • 3 c. grated summer squash
  • dash of salt
  • 1 small onion, grated
  • 2 eggs
  • 1 c. crushed saltine crackers
  • 2 Tbsp. grated mild cheese

Directions

    Grate squash on coarse side of grater.

    Add salt and allow to stand for 30 minutes.

    Drain off liquid.

    Add other ingredients and mix well.

    Form into small patties.

    If too moist, roll in flour.

    Fry on heavily greased griddle until slightly brown. Serve hot.
