- 3 c. grated summer squash
- dash of salt
- 1 small onion, grated
- 2 eggs
- 1 c. crushed saltine crackers
- 2 Tbsp. grated mild cheese
Directions

1Grate squash on coarse side of grater.

2Add salt and allow to stand for 30 minutes.

3Drain off liquid.

4Add other ingredients and mix well.

5Form into small patties.

6If too moist, roll in flour.

7Fry on heavily greased griddle until slightly brown. Serve hot.
