- 2 lb. squash (3 1/2 c. cooked)
- 1 large onion
- 2 c. fine bread crumbs (use food processor)
- 1 c. corn meal
- 2 eggs
- 2 tsp. salt
- 1 tsp. pepper
Directions

1Cook squash and onion together; drain well.

2Add all ingredients, except for corn meal.

3If not dry enough, add more bread crumbs.

4Roll into long shapes, then roll in cornmeal. Deep fat fry in oil or use a deep skillet with oil.

5Drain on paper towels and serve.
