Squash Croquettes

Ingredients

  • 2 lb. squash (3 1/2 c. cooked)
  • 1 large onion
  • 2 c. fine bread crumbs (use food processor)
  • 1 c. corn meal
  • 2 eggs
  • 2 tsp. salt
  • 1 tsp. pepper

Directions

    Cook squash and onion together; drain well.

    Add all ingredients, except for corn meal.

    If not dry enough, add more bread crumbs.

    Roll into long shapes, then roll in cornmeal. Deep fat fry in oil or use a deep skillet with oil.

    Drain on paper towels and serve.
