Squash Croquettes

Ingredients

  • 2 lb. squash
  • 1 large onion, grated
  • 2 c. fine bread crumbs
  • 1 c. corn meal
  • 2 eggs
  • 2 tsp. salt
  • 1 tsp. pepper

Directions

    Cook squash in small amount of water until tender.

    Drain very well.

    Mash squash; add other ingredients except meal.

    Add more bread crumbs if necessary for easy handling.

    Form into oblong croquettes and roll in meal.

    Deep fat fry until golden brown.
