- 2 lb. squash
- 1 large onion, grated
- 2 c. fine bread crumbs
- 1 c. corn meal
- 2 eggs
- 2 tsp. salt
- 1 tsp. pepper
Directions

1Cook squash in small amount of water until tender.

2Drain very well.

3Mash squash; add other ingredients except meal.

4Add more bread crumbs if necessary for easy handling.

5Form into oblong croquettes and roll in meal.

6Deep fat fry until golden brown.
