Ingredients

  • 1 c. mashed cooked winter squash
  • 1 c. whipping or heavy cream
  • 1 c. sugar
  • 3 eggs, lightly beaten
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • dash of salt
  • 1 unbaked pie pastry (9-inch)

Directions

    In a mixing bowl, combine all ingredients except for the pie pastry and additional whipped cream. Pour into the pastry.

    Bake at 375° for 10 minutes.

    Reduce heat to 350°, bake for 45 minutes. Cool on a wire rack.

    Chill.

    Serve with a dollop of whipped cream.
