Ingredients

  • 1 lb. summer squash, sliced, or 1 (1 qt.) bag frozen
  • 1/2 stick margarine, melted
  • 1 tsp. sugar
  • 1 egg
  • 1/2 c. mayonnaise
  • salt and pepper to taste
  • 1/2 c. Ritz cracker crumbs
  • 2 tsp. margarine
  • 1/2 c. nuts (optional)
  • 1/2 c. grated cheese
  • 1/4 c. chopped green peppers

Directions

    Cook squash in water (covered tightly) for 12 minutes, or until tender; drain well.

    Add other ingredients to squash, except crumbs, cheese and 2 teaspoons margarine.

    Stir well.

    Put crumbs on top; add cheese and dot with butter.

    Cook for 20 to 30 minutes, or until brown.
