- 1 lb. summer squash, sliced, or 1 (1 qt.) bag frozen
- 1/2 stick margarine, melted
- 1 tsp. sugar
- 1 egg
- 1/2 c. mayonnaise
- salt and pepper to taste
- 1/2 c. Ritz cracker crumbs
- 2 tsp. margarine
- 1/2 c. nuts (optional)
- 1/2 c. grated cheese
- 1/4 c. chopped green peppers
Directions

1Cook squash in water (covered tightly) for 12 minutes, or until tender; drain well.

2Add other ingredients to squash, except crumbs, cheese and 2 teaspoons margarine.

3Stir well.

4Put crumbs on top; add cheese and dot with butter.

5Cook for 20 to 30 minutes, or until brown.
