Squash Dressing

Ingredients

  • 2 c. cooked squash, mashed
  • 1/2 c. chopped green onion
  • 3 eggs
  • 1 slice toast crumbs
  • 1 c. half cornmeal and half flour
  • 3 slices uncooked bacon, chopped
  • 2 tsp. sage
  • 2 green peppers, diced
  • salt and pepper to taste

Directions

    Fry bacon until brown.

    Add onions and green pepper and cook until limp.

    Add squash, cornmeal and flour mixture, crumbs, eggs, sage and salt and pepper.

    Mix well.

    Pour into buttered casserole dish.

    Dot with butter.

    Bake 15 minutes at 425°

    or until brown.
