  • 2 c. cooked squash, drained (yellow or zucchini)
  • 1 bell pepper, chopped
  • 1 can cream of chicken soup, with enough water to rinse can
  • 2 c. corn bread, crumbled
  • 1 medium onion, chopped
  • 3/4 c. celery, chopped
  • 1/2 stick oleo
  • 2 Tbsp. chopped pimentos
  • Parmesan cheese (optional)

Directions

    Mix all ingredients except Parmesan cheese.

    Pour into a buttered 8 x 8 x 2-inch casserole.

    Top with Parmesan cheese.

    Bake in 350° oven for 30 to 40 minutes.
