  • 2 cups Crumbled Cornbread
  • 3 whole Yellow Squash
  • 1/4 cups Corn Meal
  • 1 cup Chopped Onion, Divided Use
  • 2 Tablespoons Oil
  • 1 stick Butter Or Margarine, Melted
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 2 whole Eggs
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 2 Tablespoons Milk

Directions

    Prepare the cornbread ahead of time using your favorite recipe.

    Dice squash and then dust it in the corn meal.

    Heat some oil in skillet on medium heat.
  4. 4
    Add 1/2 cup of the onion and the squash.

    Cook on medium heat until brown.

    Mix cooked squash/onions, butter, cornbread, soup and the remaining onions in large bowl.

    Beat eggs and add to mixture.

    Mix thoroughly.

    If the mixture seems too dry add a little milk.

    Salt and pepper to taste.

    Pour into greased casserole dish and cook at 350 degrees for 30-45 minutes until brown.
