- 3/4 pounds, 1- 1/4 ounces, weight Spinach
- 2 whole Shallots
- 1 clove Garlic
- 1 ounces, weight Butter
- 13 tablespoons, 1- 1/2 teaspoons, 1- 1/4 pinches Red Wine
- Salt And Pepper, to taste
Directions

1Pinch off the spinach leaves and discard stems.

2Soak the leaves, covered in water for 30 minutes.

3Drain the spinach.

4Rinse and drain it a couple more times until the water is clear.

5Drain it one last time and roughly cut the leaves into smaller chunks.

6Finely chop the shallots and crush the garlic through a press.

7Melt the butter in a large skillet.

8Stir in chopped shallots and garlic over medium heat for 2-3 minutes.

9Pour in red wine and cook until its reduced and syrupy.

10Add in chopped spinach and cook, covered, for 2-3 minutes.

11Taste and season with salt and pepper.
