Squash Fritters

Ingredients

  • 2 c. grated raw yellow squash
  • 1 tsp. grated onion
  • 2 tsp. sugar or less
  • 1 tsp. salt
  • pepper to taste
  • 6 to 7 Tbsp. plain flour
  • 2 eggs, beaten
  • 3 or 4 Tbsp. oil for frying

Directions

    Mix all ingredients and drop by tablespoons into oiled griddle or skillet.

    Cook on both sides until lightly browned.

    Serve at once.

    Makes about 1 dozen fritters.
