- 2 c. raw summer squash, grated
- 1/4 c. onion, finely chopped
- pepper to taste
- 2 tsp. sugar
- 1/2 tsp. salt
- 6 Tbsp. flour
- 2 eggs, beaten
- 2 Tbsp. butter, melted
Directions

1Combine first 6 ingredients.

2Stir eggs into squash mixture. Add margarine.

3Drop fritters by tablespoon into a greased skillet.

4Cook until delicately brown.

5Turn and brown on other side.

6Serve immediately.
