  • 3 small squash (not more than 6-inches long)
  • 3 eggs more or less (but 3 is good)
  • 5 rounded Tbsp. flour (but not heaped too high)
  • 1/2 tsp. baking powder
  • 2 tsp. sugar
  • 1/4 tsp. salt
  • dash of pepper

Directions

    Pour oil in pan; put burner on low.

    Grate squash on coarse part of grater.
  3. 3
    Turn stove burner up to 3 and add the dry ingredients and egg quickly and start frying.

    The longer squash sets after grated, the more liquid they get.
