- 2 lb. yellow summer squash
- 8 slices bacon
- 1 large onion, sliced in rings
- 1 roll jalapeno cheese, cubed
- cracker crumbs
Directions

1Cut squash into pieces; boil in unsalted water.

2Drain completely.

3Fry bacon until crisp; remove from skillet.

4Brown onion rings in some of the bacon drippings.

5In a greased casserole, make layers, beginning with drained squash, crumbled bacon, onion rings and cheese cubes.

6Repeat layers, then top with cracker crumbs.

7Bake at 325° for 40 minutes.
