- 4 medium zucchini, cut up
- 1 pkg. crackers (saltines)
- 1/4 c. finely chopped onion
- garlic salt
- 1 egg, beaten
- oil
Directions

1Cook squash until done in salted water; drain well.

2Smash squash; drain again.

3Add crackers, coarsely crumbled, a few at a time until mixture resembles a mush consistency.

4Add onion, egg and garlic salt to taste.

5Heat oil in frypan on medium heat.

6Fry spoonful of mixture as you would a pancake.

7Patties will be crisp golden brown on both sides.

8Can be served as an appetizer or side dish.
