  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 1 can crushed tomato
  • 1 medium carrot
  • 2 stalks of celery
  • 1 tbsp fresh ginger
  • 3 clove garlic
  • 1/2 tsp chipotle chilli powder
  • 2 bay leaves
  • 1/2 cinnamon stick
  • 2 tsp paprika, ground cumin, coriander
  • 1 tsp dried thyme, basil, oregano
  • 1 cup frozen or fresh corn
  • 1/2 cup minced parsley or cilantro
  • 2 tbsp soy sauce
  • 3 can kidney and black beans
  • 1 can 6 oz tomato paste
  • 2 tbsp olive oil
  • 1 cup bulgar or cracked wheat
  • 1 jalapeno

Directions

    turn 8-10 qt crackpot on high

    add cooked beans, water, bulgar, tomato paste, bay leaves, and cinnamon stick to the crockpot

    after sauteing the veggies & spices, transfer then to the crockpot

    reduce heat to low, cover and cook 4-6 hrs

    add corn, minced parsley, soy sauce .

    cook and cover for another 1/2 hr on high heat
