  • 10 oz. summer squash
  • 1 egg, beaten
  • 1/4 c. flour
  • 1/4 c. cornmeal
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 medium onion, finely chopped
  • 3 or 4 Tbsp. vegetable oil
  • salt and pepper to taste

    Cook squash until tender.

    Drain well.

    Combine squash with remaining ingredients.

    Drop by spoon into hot oil.

    Brown on both sides.
