- 10 oz. summer squash
- 1 egg, beaten
- 1/4 c. flour
- 1/4 c. cornmeal
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 medium onion, finely chopped
- 3 or 4 Tbsp. vegetable oil
- salt and pepper to taste
Directions

1Cook squash until tender.

2Drain well.

3Combine squash with remaining ingredients.

4Drop by spoon into hot oil.

5Brown on both sides.
