- 8 medium yellow squash, shredded
- 1 medium onion, finely chopped
- 2 tsp. salt
- 1 1/2 c. shredded Cheddar cheese
- 1 c. unsifted self-rising flour
- 1/2 c. corn meal
- 1/4 tsp. pepper
- 1 egg, slightly beaten
Directions

1Place squash and onion in colander.

2Add salt.

3Let drain until moisture is gone.

4Combine drained squash, onion, cheese, flour, corn meal and pepper; mix well.

5Stir in eggs.

6Brush griddle with thin coating of oil and heat over medium flame. Using 1/3 cup mixture for each patty, fry until golden brown on both sides.

7Makes 8 servings.
