Squash Patties

Ingredients

  • 2 c. squash
  • 1 medium onion
  • 1 c. self-rising corn meal
  • 1 egg
  • 1/2 c. buttermilk
  • 1/2 c. cheese (optional)

Directions

    Boil the squash and onion in water until tender; drain.

    Next add the cornmeal and egg.
  3. 3
    Continue stirring and add the milk and cheese, if you prefer.

    Drop the patties into hot grease, preferably in an iron skillet.

    Cook just the same as you would any other type of patty.

    Cook on low or medium.

    Brown and drain on a paper towel.
