Squash-Pecan Casserole

  • 1 lb. yellow squash
  • 1/2 stick margarine
  • 1/2 c. grated cheese
  • 1/2 c. mayonnaise
  • 1 egg
  • 1 1/2 Tbsp. sugar
  • 1 c. bread crumbs
  • 1/2 c. pecans

Directions

    Boil squash until tender (about 20 minutes) in salted water. Drain.

    Combine all ingredients except crumbs and pecans. Top with crumbs (mix with 1/2 cup melted margarine) and pecans. Bake in a 400° oven for 20 minutes.
