Ingredients

  • 8 c. thinly sliced yellow squash
  • 2 c. thinly sliced whole onions
  • 4 large green peppers, thinly sliced
  • 1 c. kosher salt
  • 2 to 3 trays ice
  • 3 c. sugar
  • 3 c. white vinegar
  • 2 Tbsp. celery seed
  • 2 Tbsp. mustard seed
  • 2 Tbsp. turmeric
  • 1 tsp. alum or pickling lime

Directions

    Combine the first 5 ingredients and let stand 2 to 3 hours. Stir often, about every 15 to 20 minutes.

    Combine remaining ingredients and bring to a boil.

    Drain squash mixture and add to boiling mixture; boil 3 minutes.

    Pack in sterilized jars and seal.

    Process in boiling water bath for 10 minutes.
