- 8 c. thinly sliced yellow squash
- 2 c. thinly sliced whole onions
- 4 large green peppers, thinly sliced
- 1 c. kosher salt
- 2 to 3 trays ice
- 3 c. sugar
- 3 c. white vinegar
- 2 Tbsp. celery seed
- 2 Tbsp. mustard seed
- 2 Tbsp. turmeric
- 1 tsp. alum or pickling lime
Directions

1Combine the first 5 ingredients and let stand 2 to 3 hours. Stir often, about every 15 to 20 minutes.

2Combine remaining ingredients and bring to a boil.

3Drain squash mixture and add to boiling mixture; boil 3 minutes.

4Pack in sterilized jars and seal.

5Process in boiling water bath for 10 minutes.
