Ingredients

  • 8 c. thin sliced squash
  • 2 c. sliced onions
  • 2 c. vinegar
  • 4 or 5 small bell peppers, sliced (optional)
  • 2 tsp. celery seed
  • 2 tsp. mustard seed
  • 3 c. sugar

Directions

    Put squash and onion in bowl.

    Sprinkle with salt and let stand for 1 hour.

    Drain any liquid.
  4. 4
    Mix vinegar, sugar, celery seed, mustard seed and bell pepper in saucepan and let it come to a boil.

    Add squash and onion to vinegar mixture.
  6. 6
    Place in hot jars and seal.
