- 4 qt. sliced squash
- 6 medium white onions, sliced
- 2 bell peppers, sliced
- 1/3 c. pickling salt
- 1 1/2 tsp. turmeric
- 5 c. cider vinegar
- 1 1/2 tsp. celery seed
- 2 Tbsp. mustard seed
Directions

1Mix squash, onion and pepper.

2Cover with salt, mix well and let stand 1 hour.

3Drain.

4Mix rest of ingredients.

5Pour over squash mixture.

6Bring to a boil.

7Fill hot jars to 1/2-inch from top.

8Adjust lids and process in hot water bath for 5 minutes.
