  • 8 c. yellow squash (thinly sliced)
  • 2 c. onions
  • 2 lg. bell peppers
  • 1 sm. jar Pimentos
  • 1/4 c. salt
  • 3 c. sugar
  • 2 c. vinegar
  • 2 tsp. celery seed
  • 2 tsp. mustard seed

Directions

    Mix yellow squash, onions, bell peppers, and Pimentos and cover with salt, add ice, let stand 1 1/2 hours, drain. Mix sugar, vinegar, celery seed, and mustard seed. Simmer about 5 minutes. Add vegetables, bring to boil. Pack in jars and seal.
