- 8 c. yellow squash (thinly sliced)
- 2 c. onions
- 2 lg. bell peppers
- 1 sm. jar Pimentos
- 1/4 c. salt
- 3 c. sugar
- 2 c. vinegar
- 2 tsp. celery seed
- 2 tsp. mustard seed
Directions

1Mix yellow squash, onions, bell peppers, and Pimentos and cover with salt, add ice, let stand 1 1/2 hours, drain. Mix sugar, vinegar, celery seed, and mustard seed. Simmer about 5 minutes. Add vegetables, bring to boil. Pack in jars and seal.
