- 2 c. cooked squash, drained
- 2 eggs
- 1 c. sugar
- 4 Tbsp. flour
- 1 Tbsp. lemon juice
- 1/2 tsp. lemon extract
- 1 c. evaporated milk
- 1 c. crushed pineapple, drained (add last)
Directions

1Mix together eggs, sugar and flour.

2Add remaining ingredients, adding pineapple last.

3Put in unbaked pie crust. Makes 2 pies.

4Bake at 400° for 30 to 40 minutes.
