Squash & Potato Casserole

Ingredients
- 1/2 onion, chopped
- 2 tablespoons butter
- 3 yellow squash
- 3 small russet potatoes
- 1/2 cup sour cream
- 1 cup mild cheddar cheese, grated
- salt, to taste
- pepper, to taste
- 1 cup Ritz cracker, crushed
- 2 tablespoons butter, melted
Directions

1Preheat oven to 350.

2Cut up squash and potatoes (into small chunks) and boil in water until tender.

3Drain and set aside.

4Saute onion in butter for 3-5 minutes and remove from pan.

5Mix onion, sour crean, cheese, salt and pepper together.

6Add potatoes and squash.
-
7Pour into a 2 quart casserole dish.

8Mix Ritz with melted butter and spread on the casserole.

9Bake for 25 mintues.
