  • 2 c. mashed squash
  • 2/3 c. sugar
  • 1/2 c. coconut
  • 2 tsp. baking powder
  • 2 eggs
  • 1/4 c. flour (all-purpose)
  • 1/4 c. Carnation milk
  • 2 Tbsp. oleo
  • dash of salt
  • 1 tsp. vanilla

Directions

    Peel, cube, stew and drain squash.

    Mash well and measure to make 2 cups.

    Mix well, adding coconut last.

    Bake in 400° oven in greased pan until brown and inserted knife in middle comes out clean (about 30 minutes).
