- 5 medium size yellow squash
- 1 egg, beaten
- 1 medium onion, chopped
- 3/4 c. self-rising cornmeal
- 1/4 c. all-purpose flour
- vegetable oil
Directions

1Trim squash ends; slice and cover with water.

2Cook 20 minutes over medium heat until tender.

3Drain well.

4Mash and drain again. Combine squash and next 5 ingredients.

5Drop by scant tablespoon into 350° oil.

6Fry 5 minutes.

7This mixture can be refrigerated until next day if it makes too much.
