Ingredients

  • 10 c. grated yellow squash
  • 2 c. chopped onion
  • 4 medium bell peppers, chopped
  • 1 (4 oz.) jar pimientos
  • 1/3 c. salt
  • water to cover
  • 2 c. white vinegar
  • 3 c. sugar
  • 1 Tbsp. mustard seed
  • 1 Tbsp. celery seed

Directions

    Soak first four ingredients in salt and water to cover for 1 1/2 hours.

    Bring vinegar, sugar, mustard seed and celery seed to a boil.

    Drain squash and add to vinegar mixture.

    Stir until mixture boils.

    Put in hot jars and seal.

    Yields 4 pints.
