Ingredients

  • 10 c. chopped squash (about 4 lb.)
  • 4 c. chopped onions (about 1 1/2 lb.)
  • 1 c. chopped bell pepper (1 large)
  • 1/2 c. chopped hot pepper (about 5 large)
  • 3 Tbsp. salt
  • 4 1/2 c. sugar
  • 2 1/2 c. white vinegar (5%)
  • 1/2 Tbsp. nutmeg
  • 2 Tbsp. turmeric
  • 1 1/2 tsp. celery salt
  • 1/2 tsp. black pepper

Directions

    Mix squash, onions, bell pepper, hot pepper and salt; set overnight.

    Rinse in 2 water baths.

    Mix sugar, vinegar, nutmeg, turmeric, celery salt and black pepper.

    Boil both mixtures together for 20 minutes.

    Put in hot jars.
