  • 10 c. squash, ground
  • 4 c. onion, ground
  • 5 Tbsp. salt (canning salt)
  • 2 1/2 c. vinegar (apple cider vinegar)
  • 4 c. sugar
  • 2 tsp. dry mustard
  • 1 tsp. turmeric
  • 1 tsp. cornstarch
  • 2 tsp. celery seed
  • 1 tsp. black pepper

Directions

    Mix squash, onions and salt and let stand overnight.

    Next day, drain and run cold water through squash mixture.

    Put on stove and add last 7 ingredients and simmer for 30 minutes.

    Pack in jars and seal.

    Makes 8 quarts.
