Squash-Rice Casserole

  • 1 stick butter or margarine
  • 1 c. rice (uncooked)
  • 2 c. squash, sliced
  • 1/4 c. onion, diced
  • 2 cans cream of mushroom soup or 2 cans cream of chicken or 1 can of each
  • 1 1/2 soup cans water
  • salt and pepper to taste

Directions

    Mix all together.

    Pour into 2-quart casserole.

    Bake, covered, at 375° for 1 hour.

    Stir well after first half hour baking.
