- 2 teaspoons olive oil
- 1 1/4 cups sliced onion (about 1 medium onion)
- 1 cup red bell pepper strips
- 3 garlic cloves, minced
- 4 cups sliced yellow squash (about 1 pound)
- 1 tablespoon chopped fresh or
- 1 teaspoon dried basil
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon salt
- 2 tablespoons grated Parmesan cheese
Directions

1Heat oil in a large nonstick skillet over medium-high heat. Add onion, bell pepper, and garlic; cook, stirring constantly, 2 minutes. Add squash; cook, stirring constantly, 6 minutes or until vegetables are crisp-tender. Stir in basil, lemon pepper, and salt. Remove from heat, and sprinkle with Parmesan cheese. Serve immediately.
