  • 2 c. yellow squash, cooked, drained and mashed
  • 1 c. saltines, crumbled
  • 1 c. milk
  • 3 Tbsp. margarine, melted
  • 1 Tbsp. parsley, chopped
  • 2 Tbsp. pimento, chopped
  • 1/4 c. Cheddar cheese, grated
  • bread crumbs
  • margarine
  • paprika

Directions

    Mix all ingredients together (except last 3) and pour into a casserole dish. Sprinkle top with bread crumbs. Dot with margarine. Sprinkle lightly with paprika. Bake at 350° for 30 to 45 minutes. Serves 6 to 8.
