- 4 medium, yellow squash, sliced
- 1 medium, chopped onion
- salt and pepper to taste
- 4 crackers, crushed
- 4 Tbsp. melted butter
- 2 eggs, separated
- 1/3 c. grated cheese
Directions

1Steam onion and squash together until tender; drain excess water and mash well.

2Add crackers, salt, pepper, butter, beaten egg yolks and cheese; blend well.

3Fold in stiffly beaten egg whites.

4Pour into baking dish.

5Bake about 45 minutes or until set and slightly browned.
