Squash Souffle

Ingredients

  • 2 c. cooked mashed yellow squash
  • 1 c. dry bread crumbs or 4 slices bread, crumbled
  • 1 small onion, grated or chopped and cooked with squash
  • 2 eggs, beaten
  • 1 c. milk, heated
  • 3 tsp. margarine
  • 1 c. sharp Cheddar cheese, grated
  • salt and pepper to taste

Directions

    Melt margarine in hot milk.

    Pour over bread crumbs. Mix well and add to squash. Season with salt and pepper. Stir in eggs and pour into greased baking dish.

    Top with grated cheese. Bake about 20 minutes or until cheese is bubbly.
