- 2 c. cooked yellow squash
- 1 c. milk, scalded
- 1 c. bread crumbs
- 3 Tbsp. bacon drippings
- 2 beaten eggs
- 8 oz. sharp cheddar cheese, grated
- 1 grated medium onion
- 1/2 tsp. baking powder
- 1 stack Ritz crackers, crushed
- 1 stick oleo
Directions

1Drain squash in large bowl, mash.

2Combine milk, bread crumbs and bacon drippings.

3Add to squash.

4Add eggs, cheese, onion, and baking powder.

5Pour into rectangular baking dish.

6Soak cracker crumbs in melted oleo.

7Sprinkle on top of souffle.

8Bake at 350° for 30 minutes.

9Yield: 10-12 servings.
