- 4 medium yellow squash
- 1 medium onion, chopped
- salt and pepper to taste
- 4 saltine crackers, crushed
- 4 Tbsp. margarine, melted
- 2 eggs, separated
- 1/3 c. grated cheese
Directions

1Steam onion and squash together until tender.

2Drain excess water and mash well.

3Add crushed crackers, salt, pepper, margarine, cheese and beaten egg yolks.

4Blend well.

5Fold in stiffly beaten egg whites.
