Squash Souffle

Ingredients

  • 2 lb. squash
  • 2 slices bread
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 stick oleo
  • 1/2 c. milk
  • 1 c. bread crumbs

Directions

    Cook squash and mash.

    Put slices of bread in dish and add warm milk.

    When bread is soft, add hot squash and the rest of the ingredients except bread crumbs.

    Mix well and bake at 350° for 45 minutes in a 2-quart casserole.

    Spread crumbs over top and put back in oven and brown.
