- 12 cup olive oil
- 1 medium white onion, chopped
- 1 lb winter squash, cut into 1-inch cubes
- salt
- 4 tablespoons grated parmesan cheese
- 2 tablespoons minced parsley
- sliced bread
- 1 garlic clove, halved
Directions

1Heat oil and saute onion until soft.

2Add squash and salt to taste.

3Cover and cook for 10 minutes, stirring occasionally on medium heat.

4Add enough water to cover squash adn cook for another 30 minutes.

5Sprinkle with cheese and parsley.

6Toast bread and rub slices with cut side of garlic to make crostini, and serve with the soup.
