Squash Soup

  • 12 cup olive oil
  • 1 medium white onion, chopped
  • 1 lb winter squash, cut into 1-inch cubes
  • salt
  • 4 tablespoons grated parmesan cheese
  • 2 tablespoons minced parsley
  • sliced bread
  • 1 garlic clove, halved

Directions

    Heat oil and saute onion until soft.

    Add squash and salt to taste.

    Cover and cook for 10 minutes, stirring occasionally on medium heat.

    Add enough water to cover squash adn cook for another 30 minutes.

    Sprinkle with cheese and parsley.

    Toast bread and rub slices with cut side of garlic to make crostini, and serve with the soup.
