Ingredients
- 2 lb. yellow squash, cleaned and sliced
- 2 Tbsp. margarine or butter
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1/2 c. water chestnuts
- 1/2 c. Cheddar cheese, grated
- 1/2 c. mayonnaise
- 1 tsp. sugar
- 1 egg, well beaten
- buttered bread crumbs
- salt and pepper to taste
Directions

1Preheat oven to 350°.

2Cook squash in boiling water until tender, about 5 minutes.

3Drain well and mash.

4Saute onions, bell pepper and water chestnuts in butter.

5When tender, combine with squash.

6Fold in cheese, mayonnaise, sugar, egg, salt and pepper. Pour into buttered 1 1/2-quart casserole.

7Top with buttered bread crumbs and bake 30 minutes.
