Ingredients
- 2 lb. yellow summer squash
- 1 small can water chestnuts
- salt and pepper to taste
- 1/2 pkg. Pepperidge Farm stuffing mix
- 1 medium diced onion
- 1 small jar pimentos (optional)
- 1 (8 oz.) carton sour cream
- 1/2 stick margarine
Directions

1Boil together squash and onion for 5 minutes.

2Drain well in colander.

3Drain water chestnuts and add to squash with pimentos, sour cream and salt and pepper.

4Mix well.

5Melt margarine in glass 8 x 12-inch baking dish.

6Cover bottom of dish with stuffing mix reserving half to sprinkle on top.

7Spoon squash mixture over stuffing and sprinkle remaining stuffing on top.

8Cover and bake at 300° for 25 minutes.
