- 6 squirrels
- 3 tsp. salt
- 3 chicken bouillon cubes
- 1 tsp. pepper
- 1/2 c. chopped celery
- 2 c. chopped onion
- 1 c. chopped bell pepper
- 1 qt. tomatoes
- 2 c. cooked rice
- 1 can cream-style corn
- 2 medium potatoes, cooked
- red pepper to taste
- sugar to taste
Directions

1Cook squirrels, salt, pepper and bouillon cubes in pressure cooker until tender, about 30 minutes.

2Cool and remove meat from bones.

3Add onion, celery and green peppers to squirrel broth. Cook until tender.

4Add rice, potatoes, tomatoes, corn, red pepper and sugar.

5Simmer on low heat until thickened.

6Add squirrel and stir.

7Serve warm.
