  • 6 squirrels
  • 3 tsp. salt
  • 3 chicken bouillon cubes
  • 1 tsp. pepper
  • 1/2 c. chopped celery
  • 2 c. chopped onion
  • 1 c. chopped bell pepper
  • 1 qt. tomatoes
  • 2 c. cooked rice
  • 1 can cream-style corn
  • 2 medium potatoes, cooked
  • red pepper to taste
  • sugar to taste

Directions

    Cook squirrels, salt, pepper and bouillon cubes in pressure cooker until tender, about 30 minutes.

    Cool and remove meat from bones.

    Add onion, celery and green peppers to squirrel broth. Cook until tender.

    Add rice, potatoes, tomatoes, corn, red pepper and sugar.

    Simmer on low heat until thickened.

    Add squirrel and stir.
